Wholemeal Spinach Fritters


- 2 cups of fresh spinach leaves, washed and chopped
- 1 cup of wholemeal flour
- 1 teaspoon of salt
- 2 tablespoons of virgin olive oil
- 1/2 cup of water


1. In a large bowl, mix together the wholemeal flour, salt, and olive oil.

2. Add the chopped spinach leaves and mix until everything is combined.

3. Slowly add the water and mix until a thick batter forms.

4. Heat a large skillet over medium-high heat and add a tablespoon of olive oil.

5. Drop spoonfuls of the batter onto the skillet and cook for 2-3 minutes on each side, or until golden brown.

6. Serve the fritters warm with a dollop of sour cream or your favorite dipping sauce. Enjoy!
