Wholemeal Spinach Pancakes
Ingredients:
- 2 cups of wholemeal flour
- 2 cups of spinach, finely chopped
- 1 teaspoon of salt
- 2 tablespoons of virgin olive oil
- 2 cups of water
Instructions:
1. In a large bowl, combine the wholemeal flour, salt, and olive oil.
2. Add the chopped spinach and mix until combined.
3. Slowly add the water and mix until a thick batter forms.
4. Heat a non-stick pan over medium heat.
5. Grease the pan with a little olive oil.
6. Scoop a quarter cup of the batter into the pan and spread it out evenly.
7. Cook for 2-3 minutes on each side, or until golden brown.
8. Serve with your favorite toppings. Enjoy!
