Yam and Spinach Stir-Fry
Ingredients:
- 1 large yam, peeled and cut into cubes
- 2 cups of spinach, chopped
- 1 tomato, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook for 2-3 minutes, stirring occasionally.
3. Add the yam cubes and cook for 5 minutes, stirring occasionally.
4. Add the tomato and spinach and cook for an additional 5 minutes, stirring occasionally.
5. Season with salt and pepper to taste.
6. Serve warm. Enjoy!
