Yam, Bean and Plantain Stew
Ingredients:
- 2 large yams, peeled and cut into 1-inch cubes
- 2 cups cooked black beans
- 2 ripe plantains, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 3 minutes.
2. Add the yams, beans, plantains, cumin, paprika, oregano, salt, and pepper. Stir to combine.
3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 15 minutes, or until the yams are tender.
4. Stir in the cilantro and serve. Enjoy!
