Make Yassa Chicken

Recipe Name: Yassa Chicken

Ingredients:
- 1 whole chicken, cut into pieces
- 2 onions, thinly sliced
- 3 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 2-3 hot peppers, chopped (adjust to taste)
- 1/2 cup lemon juice
- 1/4 cup white vinegar
- 1/4 cup vegetable oil
- 1 tablespoon Dijon mustard
- 1 bay leaf
- Salt and pepper to taste
- Cooked rice, for serving

Instructions:
1. In a large bowl, combine the sliced onions, minced garlic, grated ginger, chopped hot peppers, lemon juice, white vinegar, vegetable oil, Dijon mustard, bay leaf, salt, and pepper. Mix well to combine all the ingredients.
2. Add the chicken pieces to the marinade and coat them well. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or preferably overnight for the flavors to develop.
3. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken pieces along with the marinade to the skillet.
4. Cook the chicken for about 10-15 minutes on each side, or until it is cooked through and nicely browned.
5. Serve the Yassa Chicken hot over cooked rice, spooning some of the flavorful sauce over the top. Enjoy!
