Zucchini and Carrot Beef Bake
Ingredients:
-1 lb ground beef
-1 zucchini, diced
-1 carrot, diced
-1 bell pepper, diced
-1/2 cup grated cheese
-1 log of goat cheese, crumbled
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, cook ground beef until browned. Drain off any excess fat.
3. Add the diced zucchini, carrot, and bell pepper to the skillet and cook until vegetables are tender.
4. Season with salt and pepper, to taste.
5. Transfer the beef and vegetable mixture to a greased 9x13 baking dish.
6. Sprinkle the grated cheese and crumbled goat cheese over the top.
7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
8. Serve warm. Enjoy!
