Zucchini and Potato Frittata
Ingredients:
- 2 tablespoons of butter
- 2 eggs
- 1 small zucchini, diced
- 1 small potato, diced
Instructions:
1. Preheat oven to 350°F.
2. In a medium skillet, melt the butter over medium heat.
3. Add the diced zucchini and potato to the skillet and cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
4. In a medium bowl, whisk together the eggs.
5. Add the cooked vegetables to the egg mixture and stir to combine.
6. Pour the egg and vegetable mixture into a greased baking dish.
7. Bake in preheated oven for 15-20 minutes, or until the frittata is set and lightly golden.
8. Serve warm. Enjoy!
