Make Zucchini and Roquefort Bread Pudding
Zucchini and Roquefort Bread Pudding
Ingredients:
- 2 medium zucchinis, grated
- 4 slices of bread, cubed
- 2 eggs
- 1 mango, diced
- 4 ounces Roquefort cheese, crumbled
- 1 small onion, diced
Instructions:
1. Preheat oven to 350°F. Grease a 9x13 inch baking dish.
2. In a large bowl, combine the grated zucchini, cubed bread, eggs, diced mango, crumbled Roquefort, and diced onion. Mix until all ingredients are evenly distributed.
3. Pour the mixture into the prepared baking dish.
4. Bake for 40 minutes, or until the top is golden brown and the center is set.
5. Serve warm. Enjoy!
