Zucchini, Bacon, and Mascarpone Frittata
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups diced zucchini
- 6 slices bacon, cooked and crumbled
- 6 large eggs
- 1/2 cup mascarpone cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add garlic and zucchini and cook until zucchini is tender, about 5 minutes.
3. Add bacon and stir to combine.
4. In a medium bowl, whisk together eggs, mascarpone cheese, salt, and pepper.
5. Pour egg mixture into the skillet and stir to combine.
6. Place skillet in the oven and bake for 15-20 minutes, or until eggs are set.
7. Serve warm. Enjoy!
