Zucchini Frittata
Ingredients:
- 2 tablespoons olive oil
- 2 medium zucchini, diced
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon dried basil
- 2 bay leaves
- 1/4 cup grated Parmesan cheese
- 4 eggs, lightly beaten
Instructions:
1. Preheat oven to 375°F.
2. Heat the olive oil in a large oven-safe skillet over medium-high heat.
3. Add the diced zucchini and season with salt and pepper. Cook, stirring occasionally, until the zucchini is lightly browned and just tender, about 5 minutes.
4. Add the paprika, basil, and bay leaves. Cook for 1 minute more.
5. Reduce the heat to low and add the Parmesan cheese and eggs. Stir to combine.
6. Cook for 2 minutes, stirring occasionally, until the eggs are just set.
7. Transfer the skillet to the preheated oven and bake for 15 minutes, or until the eggs are cooked through.
8. Serve warm. Enjoy!
