Zucchini Mozzarella Rice Cakes

Ingredients:

- 1 cup cooked white rice
- 1 cup shredded mozzarella cheese
- 1 cup grated zucchini
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons honey
- 2 tablespoons vegetable oil

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the cooked rice, mozzarella, zucchini, flour, sugar, and cinnamon.

3. In a separate bowl, mix together the honey and oil.

4. Add the honey and oil mixture to the rice mixture and stir until combined.

5. Grease a baking sheet with oil.

6. Using a spoon, scoop out 1/4 cup of the mixture and form into a patty. Place the patty on the baking sheet.

7. Repeat with the remaining mixture.

8. Bake for 15-20 minutes, or until the cakes are golden brown and crispy.

9. Serve warm with extra honey, if desired. Enjoy!
